How do you set the aperture on a pentax 35mm film camera when using a Tamron lens?

It’s a Pentax ZX-M and the lens is a Tamron 28-80mm f/3.5-5.6. I don’t know how to set the aperture. I’m trying to do shallow DOF and great DOF, but when I set the aperture and move the zoom, the aperture changes.
what else do you guys need to know?

Because some of my contacts wanted to see the IQ difference between the 2 cameras, I have taken my time to help those who have asked. I am posting (6) sets of photos shot during 2:00pm in bright sunlight.

On the Fuji X-Pro 1 is the Fujinon 35mm f/1.4 lens. Settings were Aperture Priority, JPEG mode set to Standard. All other settings are set to default.

On the OM-D E-M5 is the Panasonic 20mm f/1.7 lens. Settings were Aperture Priority, JPEG mode set to Natural. All other settings are set to default—such as in-camera noise reduction being ON.
While the focal lengths are quite different, these are the 2 lenses I have that perhaps perform best on each camera.

I am posting full size, straight out of camera jpegs for those interested in pixel peeping.

From my quick analysis, both camera are capable of outputting some amazing jpegs. Oly tends to be warmer, while Fuji tends to enhance the green color. In terms of color accuracy (OOC Jpeg), Fuji colors are arguably more accurate; for example, FedEx orange looks a little too red from OM-D, while the orange looks quite accurate from Fuji.

Dynamic range is better from Fuji. But, for m43, OM-D displays amazing range and clarity.

I’m curious to see what I can do with the RAW files from both cameras. Unfortunately, as of today, there’s no Adobe/ PS/Lightroom Raw support.
