I don’t know a ton about cameras, but I own a Canon Rebel EOS digital camera and I was hoping to get a decent macro lens.

i use a tamron 90mm F2.8 for most of my maco work its a good lens, i sometimes use a canon 50mm 1:2 macro lens,
another option would be the 100mm canon macro lens,

As you have guessed it is all in the editing.
In the old days of shooting film, we used to put our final edit on a light table and the organize the images for their greatest impact.
Since you are using digital images you may just have to print 4×6 inch images and then with them on the floor, move them around until the make some kind of sense to the theme of your book
